chef niall davidson

niall davidson grew up on his granny’s beef farm in derry on the north coast of ireland, left school to take up butchering, then moved to london to become a chef. niall was eventually named one of six “secret weapons behind london’s top restaurants” by zagat in 2016. he started his career at st. john bread and wine, under head chef lee tiernan and cooking has taken him all over the world from peru, asia, australia and europe. he has been lucky to have worked with and be mentored by some of the world's best chefs.

now living and working in dublin with his wife, his drive is to develop his style of modern irish food and push the boundaries of flavour and technique. his food is deeply inspired by his travels but rooted in local seasonal ingredients and the personal connections he has to his suppliers.
